Zesty Sauce, and the Horseradish Nobody Expects to Find in It
The dip that makes the onion rings worth ordering, in five minutes.

This sauce has a devoted following out of all proportion to its billing. It comes in a small pot with onion rings, it is not on any menu board in its own right, and people ask for extra pots of it.
What makes it distinctive is horseradish. That is not an obvious ingredient in a fast food dip and it is what gives the sauce its late, nasal kick - the heat you notice a second after swallowing rather than on the tongue. Copycat versions built on chilli or cayenne get a burn in the wrong place and at the wrong time.
Beyond that it is a straightforward cold emulsion: mayonnaise, ketchup, horseradish, paprika, a little vinegar. Five minutes of stirring and an hour in the fridge.
The method gives quantities, timings and observable cues rather than asking you to guess. The 4 cases in If it goes wrong explain likely causes and corrective action.

Two products get sold under this name and they are not interchangeable.
Creamed horseradish - the pale, spoonable sauce in a jar - is horseradish cut with cream, vinegar and sugar. It is mild. This recipe is written for it and uses two tablespoons.
Hot horseradish or grated horseradish is far stronger. If that is what you have, use one tablespoon and taste before adding more.
Fresh horseradish root, grated, is stronger again and also volatile: its heat comes from compounds that dissipate within an hour of grating, so a sauce made with fresh root is fierce immediately and mild the next day. For a sauce that needs to rest, jarred is genuinely the better choice.
Wasabi is not a substitute. It is a different plant with a different burn and the sauce ends up tasting of sushi.
Mayonnaise first, everything else on top, folded with a spatula until the colour is an even pale coral. Twenty or thirty turns.
Horseradish strength varies enormously between jars. It should have a distinct nasal warmth on the finish. If it does not, add a teaspoon more and fold again.
About 1 minThe powders need to hydrate and the horseradish needs to distribute. An hour is enough; overnight is slightly better.
About 1 hrIt was built for onion rings and it is excellent on far more than that, because a horseradish mayonnaise is a genuinely useful thing to have in a fridge:
It is too assertive for chicken nuggets and completely wrong on fish.
Smoked paprika in place of sweet. Very good with beef, less good with onion rings.
Double the ketchup, add a teaspoon of lemon juice and a dash of Worcestershire. Now it is a prawn cocktail sauce with attitude.
Vegan mayonnaise and a horseradish sauce without cream - check the jar. Works unchanged otherwise.
Each entry names a likely cause as well as a correction, so the advice remains useful when equipment, ingredients or batch size differ.
