Setting Up a Home Kitchen for Fast Food Cooking

The Short List of Equipment That Actually Changes the Result

Four pieces of kit account for almost all of the difference. Everything else on the shopping list is optional and most of it is a waste of money.

An overhead flat lay on dark slate of kitchen equipment: a black cast iron skillet, a probe thermometer, digital scales, a wire rack, long tongs and a bench scraper, arranged in a neat grid.

This hub exists to stop you buying things.

The recipes on this site were developed in an ordinary kitchen, and the equipment that genuinely changed results comes to four items:

A heavy pan. Cast iron or carbon steel, 26 cm or wider. This is the single biggest upgrade for burgers, because thermal mass is the whole game and a thin non-stick pan cannot hold its temperature against a cold patty.

A probe thermometer. Twelve pounds. It decides whether your chicken is cooked, whether your oil is at temperature, and whether your caramel is caramel. Guessing at any of those is how recipes fail.

Digital scales. Every dough recipe here is written in grams and in baker's percentages, because a cup of flour varies by up to 20 per cent depending on how you filled it, and 20 per cent is the difference between a pizza base and a cracker.

A wire rack. Two pounds. Everything fried or baked rests on it instead of on paper, and that alone is the difference between crisp and soggy.

That is the list. An air fryer is genuinely useful and genuinely optional. A stand mixer saves your arms and changes nothing about the result. A deep fat fryer is a convenience, not a requirement - and the safety article in this hub covers doing it properly in a pan, which is what most people will actually do.
