Cooking Wendy's at home, and what its menu costs

Square patties, fresh beef, and a chili that is genuinely one of the best things any chain sells.

A stack of home-made burgers on dark slate with loose sesame seeds and a pot of pale orange sauce.

The Wendy's recipes on this site

Not every menu item has a recipe here, and that is deliberate - We write a page when there is something genuinely worth saying about how to make the thing.

What Wendy's food actually tastes of

The patty is square because it is never frozen. Fresh beef, pressed into a square so the corners hang over a round bun - which is the point of the shape, visually. Eight-to-ten per cent fat is too lean; twenty is right.

Wendy's chili is sweet before it is hot. Tomato juice rather than stock, a spoon of sugar, and a long enough simmer that the beans break down slightly and thicken the liquid. The heat level is deliberately mild - chili powder, not chillies.

The Frosty's texture comes from malted milk powder and from being under-frozen. Frozen solid it is wrong. It should resist a spoon and defeat a straw.

About Wendy's

Wendy's sells two things that are worth a serious home cook's attention and one of them is not a burger.

The chili is a proper, slow, beef-and-bean chili with a sweet-sour tomato backbone, and the origin story is famous for a good reason: it began as a way to use burger patties that had been on the grill too long. That is why the beef in it is in coarse crumbled pieces rather than the fine mince a home chili usually gives you - the meat is browned hard first, then broken. Copy that step and your chili changes completely.

The Frosty is the other one. It is not ice cream and it is not a milkshake; it sits between the two at a texture that needs a specific fat and sugar balance to reproduce, and there is a real trick to it involving malted milk powder.
