Not every menu item has a recipe here, and that is deliberate - We write a page when there is something genuinely worth saying about how to make the thing.
Grated frozen butter, a folded dough, and a cutter pressed straight down. Twenty-five minutes from a standing start.
Browned breakfast sausage, a roux in its own fat, milk and a startling amount of black pepper. Fifteen minutes.
Cold fat, cold buttermilk, quick hands. The layers in a biscuit come from distinct pieces of solid fat suspended in the dough - in the oven their water turns to steam and forces the dough apart where each piece sat. Warm butter smears into the flour instead and coats it, giving a dense, short, crumbly biscuit. Freeze the butter and grate it on a box grater: evenly sized cold shards, distributed through the flour in forty seconds, with far less handling than rubbing in by hand.
Fold, do not knead. Three letter folds before cutting. Each fold roughly triples the number of fat layers, so three takes you from one to twenty-seven. More than three starts developing gluten and the biscuit turns tough.
Cut straight down and do not twist. This is not superstition. Twisting the cutter drags the cut edge sideways and seals the layers together at the rim, and a sealed rim physically cannot rise - the biscuit lifts in the middle and stays squat at the edges. You can see it in the oven.
Bake them touching. Sides that touch cannot brown, which keeps them soft and makes them pull apart.
The dough should look too wet. A dry biscuit dough gives a dry biscuit, and resisting the urge to add flour is most of the skill.
Hardee's is Carl's Jr under a different name east of the Mississippi - the same company, the same charbroiled burgers, two brands kept apart for historical reasons that stopped mattering decades ago.
The burgers are flame-grilled rather than griddled, which puts them in the same technical family as Burger King and means the same things apply: char stripes, fat dripping onto flame, a leaner patty that needs more sauce to compensate.
But the reason Hardee's is on this site is the breakfast menu, and specifically the biscuits, which are made from scratch in the restaurant every morning. That is genuinely unusual for a chain of that size and it is the thing worth learning.
A Southern buttermilk biscuit is a different object from a British scone despite looking similar. Far more fat, almost no sugar, a much wetter dough, and folded rather than kneaded so that it pulls apart in layers. Three techniques decide whether it works - cold fat, three letter folds, and a cutter pressed straight down without twisting - and all three are the sort of thing that sounds like superstition and turns out to be mechanics.
Split, filled with a sausage patty and an egg, or drowned in sausage gravy, it is one of the great cheap breakfasts and it costs a fraction of anything else here.

The same item, priced from each country’s own menu and converted to one currency so the columns can be read against each other. Hardee's sets prices per market, so a gap here is the chain’s pricing rather than an exchange rate artefact – and the widest gap on this list is Super Star® with Cheese, which costs $12.52 in the dearest market and $3.90 in the cheapest.

Only items Hardee's prices in at least 5 of the markets we hold are listed, because a row with three figures in it is a gap rather than a comparison.
Ranked by how many of the markets in our price data carry the item with a published price. This is computed from the menu tables, so it reflects what the chain actually sells rather than what it advertises.
