Cooking Sizzler at home, and what its menu costs

The cheese toast is the entire reason anyone remembers Sizzler.

Sizzler Cheese Toast Copycat Recipe

Soft white bread, a parmesan butter paste, and a griddle. Four minutes, and it is not made under a grill.

What Sizzler food actually tastes of

Griddled cheese-side down, never under a grill. This is the whole technique. Direct contact with a 190 °C pan browns the cheese evenly across its entire surface, because conduction is far more efficient than radiation. Under a grill you get patchy melted cheese with darker spots - a different and lesser thing.

It is parmesan, not cheddar. Parmesan has very little moisture and a great deal of protein and salt, so it forms a crisp crust rather than melting and running off the edge into the pan, where it burns. Grate it finely; coarse shreds sit in clumps and brown unevenly.

Soft white sandwich bread, thick cut. Sourdough and crusty bread both have too much structure. The appeal is a crisp cheese surface on a slice that is still soft underneath, and good bread actively defeats it.

Medium heat, three minutes. High browns the cheese before the butter has melted and the bread is still cold.

Butter the outside face as well. It gives the second side colour and stops the bread drying out.

About Sizzler

Sizzler is an American grill-and-salad-bar chain that has almost entirely vanished from its home country and remains a genuine institution in Australia and parts of Southeast Asia - an unusual trajectory, and one that explains why the nostalgia attached to it is so geographically specific.

Ask an Australian about Sizzler and you will hear about the cheese toast before anything else, and usually within thirty seconds. It is a slice of soft white bread with a parmesan-and-butter paste on one face, griddled cheese-side down so the cheese toasts against hot metal. When the last Australian restaurants closed in 2020 it made the national news, and the loudest complaint was about the toast.

It takes four minutes and costs about fourteen pence a slice. That single recipe is most of why Sizzler has a page here, and it is one of the highest ratios of affection to effort anywhere on this site.

The salad bar - the other half of the proposition - is not a recipe so much as a shopping trip, and the rest of the menu is competent grill food of a kind that has been comprehensively improved on elsewhere.
