An enriched dough, a filling that is a third cinnamon by volume, and a cream cheese frosting with a much higher chees…
Use the best cinnamon you can find and use more than feels sensible. Korintje or Saigon. The filling is brown sugar, cinnamon and softened butter in roughly equal visual volume.
The frosting is cream cheese first. Full-fat block cream cheese, butter, icing sugar, vanilla, and a pinch of salt. It goes on while the rolls are warm so half of it melts in and half stays on top.
Crowd the tin. Rolls baked with their sides touching stay tall and soft; spaced out, they dry.
Cinnabon is built on two specifics. The first is the cinnamon: a high-oil Korintje variety the company markets as Makara, noticeably sweeter and less sharp than the cassia in a supermarket jar. The second is the frosting, which is a cream cheese frosting with a much higher cream cheese ratio than a home recipe usually calls for, which is why it tastes tangy rather than merely sweet.
Everything else is a competent enriched dough. If you have made a cinnamon roll before you can make this one; the difference is entirely in those two choices plus one technique - the rolls are baked close together so the sides stay pale and soft.

Every reading we hold is on the Cinnabon price history. The full list is on the Cinnabon menu page, and the 1 item we have rebuilt at home is listed here.
The same item, priced from each country’s own menu and converted to one currency so the columns can be read against each other. Cinnabon sets prices per market, so a gap here is the chain’s pricing rather than an exchange rate artefact – and the widest gap on this list is Caramel Pecanbon, which costs $5.93 in the dearest market and $2.35 in the cheapest.

Only items Cinnabon prices in at least 5 of the markets we hold are listed, because a row with three figures in it is a gap rather than a comparison.
