The pretzel dip - milder and thinner than a queso, built to stay liquid in a paper pot. Eight minutes.
An ordinary bread dough put through an alkaline bath, buttered twice, and salted with coarse crystals. Thirty minutes…
Bake your bicarbonate of soda first. Thirty minutes at 150 C on a foil tray converts it to sodium carbonate, which is considerably more alkaline and much closer to the real thing. This is the single step that separates a good home pretzel from a bread roll in a knot.
Butter twice. Before baking for colour, after baking for gloss and flavour. The second brushing is not optional.
Pretzel salt, not table salt. Coarse crystals that do not dissolve into the crust.
A soft pretzel is a very ordinary bread dough put through one extraordinary step: a brief bath in an alkaline solution before baking. That is what gives the mahogany colour, the distinctive tang, and the chewy skin. Commercial bakeries use food-grade lye; a home kitchen uses baked bicarbonate of soda, which is safe, cheap and gets about ninety per cent of the way.
The Auntie Anne's signature on top of that is butter - a lot of it, brushed on before and after baking - and a coarse salt that stays in crystals rather than dissolving. The sweet variants use the same dough and a cinnamon sugar dunk.

The same item, priced from each country’s own menu and converted to one currency so the columns can be read against each other. Auntie Anne's sets prices per market, so a gap here is the chain’s pricing rather than an exchange rate artefact – and the widest gap on this list is Cheese Pretzel Dog, which costs $8.73 in the dearest market and $2.23 in the cheapest.
