Cake batter ice cream tastes the way it does because there is actual dry cake mix in it. That is the flavour - the particular combination of vanillin, emulsifier and fine flour that a boxed mix carries and that you cannot reproduce with vanilla alone.

Raw flour is the problem. Flour is a raw agricultural product and has been linked to outbreaks of E. coli; it is not safe to eat straight from the packet. Heat-treating it takes eight minutes and removes the issue entirely.

Everything else is the standard sweet cream base with sprinkles folded in at the end.

Heat-treating dry cake mix, and why you must

Spread the dry mix on a baking tray and bake at 160 °C for eight minutes, stirring once halfway. You are looking for the powder to reach 74 °C throughout, which eight minutes comfortably achieves in a thin layer.

It will smell faintly of biscuit and may darken very slightly. It should not brown - if it does, the layer was too thin or the oven too hot.

Let it cool completely before it goes near the base. Warm mix will melt the whipped cream and you will be starting again.

A microwave works too: 30-second bursts, stirring between, for about 90 seconds total.

Sprinkles that do not bleed

Not all sprinkles survive being folded into a wet base. The small round nonpareils bleed colour within minutes and turn the whole thing grey-purple.

Use jimmies - the small cylindrical ones. They carry more wax and hold their colour for weeks in a frozen base.

Fold them in at the very end, in the last few turns, and do not stir after that.

How to make it, step by step

Heat-treat the mix

  1. Bake the dry cake mix eight minutes at 160 °C

Spread the dry mix in a thin layer on a tray and bake for eight minutes, stirring once halfway. Raw flour is not safe to eat and this step is what makes it so.

    About 8 min
  2. Cool it completely

Spread it out and leave it until it is genuinely at room temperature. Warm mix will melt whipped cream on contact and the base will not recover.

    About 15 min

Make and freeze

  1. Whisk the cooled mix into the condensed milk

Beat the cake mix, vanilla and salt into the condensed milk until completely smooth. Doing this before the cream goes in is the only way to avoid lumps.

    About 4 min
  2. Whip the cream and fold it through

Soft peaks, then a third beaten in to loosen the mixture and the rest folded through gently until no streaks remain.

    About 5 min
  3. Fold in sprinkles last, then freeze

Add the sprinkles in the final few turns so they stay whole and do not bleed. Freeze six hours under greaseproof paper.

What went wrong, and how to fix it

Each entry names a likely cause as well as a correction, so the advice remains useful when equipment, ingredients or batch size differ.

Lumps of dry mix through the ice cream
Why it happened
The mix went in after the cream.
What to do
Whisk it into the condensed milk first, while the mixture is still loose enough to work.
Grey or purple streaks
Why it happened
Nonpareil sprinkles bleeding.
What to do
Use jimmies - the cylindrical ones - and fold them in at the very end.
Base collapsed and went runny
Why it happened
The cake mix was still warm.
What to do
Cool it fully. There is no rescuing whipped cream that has been melted.

Questions people actually ask about this recipe

Is it safe to eat raw cake mix?
Not straight from the packet. Flour is a raw agricultural product and has been linked to E. coli outbreaks. Eight minutes at 160 °C on a tray removes the risk.
Can I use vanilla instead of cake mix?
You will get vanilla ice cream. The specific cake batter flavour comes from the mix itself - the vanillin, emulsifiers and fine flour together.
Why did my sprinkles bleed?
They were nonpareils, the tiny round ones, which lose colour in a wet base within minutes. Jimmies hold up for weeks.
