Dark coffee, condensed milk stirred in hot, evaporated milk poured over ice. Five minutes and about thirty pence a glass.
Condensed milk and evaporated milk, both, and they do different jobs. Condensed milk is the sweetener and goes in first, stirred into the hot coffee so it dissolves completely. Evaporated milk is poured over the ice at the end - it gives the layered look, adds body without more sugar, and takes the edge off what would otherwise be a cloying drink.
Brew it far stronger than you think. Double strength at minimum. A full glass of ice is 200 ml of water arriving in the drink, and a normal-strength brew is thin and sour by the halfway point.
Stir the condensed milk into hot coffee, not cold. It will not dissolve into a cold liquid and sits at the bottom of the glass in a lump.
A full glass of ice, not a half-full one. Counterintuitive and correct: a full glass melts more slowly because the greater mass keeps the whole volume colder.
Black Canyon is a Thai coffee-and-restaurant chain founded in Chiang Mai in 1993, and it occupies a position that does not really exist in Britain or America: a full-menu restaurant where the coffee is the headline rather than an afterthought. You can eat a green curry and drink a properly made iced coffee in the same sitting, which is normal in Thailand and unusual almost everywhere else.
Its most copyable item is oliang-style Thai iced coffee: brewed very strong and dark, sweetened heavily with condensed milk, and poured over a full glass of ice with evaporated milk floated on top. It is one of the cheapest and most satisfying home drinks on this entire site - about thirty pence a glass - and it needs no equipment beyond something that brews strong coffee.
Traditionally the coffee is a dark blend that includes roasted grains and seeds alongside the beans, which gives it a distinctive slightly smoky, nutty character. A very dark espresso roast is the closest widely available substitute and is what most home versions use.
