Cooking Cold Stone Creamery at home, and what its menu costs

The frozen slab is theatre; the ice cream base is the recipe.

Three scoops of ice cream in a metal dish with a sauce being poured over, on a dark surface.

The Cold Stone Creamery recipes on this site

Not every menu item has a recipe here, and that is deliberate - We write a page when there is something genuinely worth saying about how to make the thing.

What Cold Stone Creamery food actually tastes of

A chilled metal tray replaces the slab. An hour in the freezer, then work fast - you have about ninety seconds before the surface warms enough to matter.

The sweet cream base is deliberately plain. Cream, milk, sugar, a modest amount of vanilla and a pinch of salt. Do not push the vanilla; it is a canvas and the mix-ins are the picture.

Higher butterfat than a supermarket tub. Around 14 to 16 per cent against 10 for an ordinary ice cream. Fat is what carries flavour and what stops the texture going icy when you fold cold solids through it.

Mix-ins go in frozen or at room temperature, never warm. A warm brownie piece melts a hole around itself and the hole refreezes as ice.

Two spatulas, chopping rather than stirring. You are cutting the mix-ins through the ice cream, not beating them into it.

About Cold Stone Creamery

Cold Stone's frozen granite slab is the most visible piece of theatre in chain food and it is also doing a real job. Folding mix-ins into ice cream on a worktop melts it; folding them on a surface held below freezing does not. The slab is why the finished scoop has whole pieces of brownie and distinct ribbons of sauce rather than a uniform beige.

You can reproduce the effect at home with a metal tray left in the freezer for an hour, and the result is genuinely close. A metal baking sheet has enough thermal mass to stay well below zero for the ninety seconds the folding takes.

The base underneath is the part actually worth learning: a rich, very high butterfat sweet cream, deliberately plain. It is a canvas rather than a flavour, and that is precisely why it takes a handful of mix-ins without tasting diluted. A heavily flavoured base fights whatever you fold into it.

The theatre - two spatulas, a lot of noise, the staff singing when you tip - you can perform in your own kitchen for free, and children find it as compelling at home as in the shop.

What Cold Stone Creamery charges in 5 countries

The same item, priced from each country’s own menu and converted to one currency so the columns can be read against each other. Cold Stone Creamery sets prices per market, so a gap here is the chain’s pricing rather than an exchange rate artefact – and the widest gap on this list is Chocolate Devotion®, which costs $11.99 in the dearest market and $3.79 in the cheapest.

Converted at the rates on how we cost recipes, from the last menu we recorded in each country. Blank means we hold no price for that item there, not that it is unavailable.
