Cooking Baskin-Robbins at home, and what its menu costs

Thirty-one flavours, a handful of which are genuinely worth churning yourself.

The Baskin-Robbins recipes on this site

Not every menu item has a recipe here, and that is deliberate - We write a page when there is something genuinely worth saying about how to make the thing.

What Baskin-Robbins food actually tastes of

No-churn works because of condensed milk, not because of the cream. Sweetened condensed milk is about 45 per cent sugar by weight, and dissolved sugar lowers the freezing point and interferes with crystal formation. That is the whole mechanism, and it is why a no-churn tub is scoopable where a frozen custard base is a brick.

Whip the cream to soft peaks, not stiff. Stiff peaks are already close to butter, and the mixture goes grainy when it freezes.

Ribbons go in at the end, barely folded. Three passes with a spatula and no more. A ribbon should be a ribbon; four more passes and you have a beige tub.

Freeze it flat and shallow. A wide container freezes faster, which means smaller crystals, which means a smoother scoop. The same principle as flat freezing anything else.

About Baskin-Robbins

Baskin-Robbins was built on a number. Thirty-one flavours - one for every day of the month - was a genuinely radical proposition in 1953, when an ice cream shop meant vanilla, chocolate and strawberry, and it is still the shape of the business seventy years on.

What the chain actually trades on now is nostalgia attached to two or three specific flavours. Pralines 'n Cream, Jamoca Almond Fudge, and the bright blue one that tastes of nothing identifiable and everything at once. People do not have a favourite ice cream shop; they have a favourite flavour that happens to be there.

Home ice cream has moved a long way in the last decade, largely because of one technique. A no-churn condensed milk base gets remarkably close to a commercial soft scoop with no machine at all, because condensed milk does the same job as the stabilisers in a commercial mix: it physically obstructs ice crystal growth and lowers the freezing point, so the tub stays scoopable straight from a domestic freezer.

That makes the flavours rather than the base the interesting part, which is also how the chain sees it.
